Web Servers That Are Not Apache

I’m a web developer. I use LAMP. I keep hearing about all these web servers that are not Apache, like lighttpd and Cherokee. Why do people use them? (Presumably performance, but what’s the performance gain and are there other benefits?) How do I set them up? Can I run them on my OS X dev box in addition to Linux? What are the drawbacks to using them?

I’m especially interested in using non-Apache for load-balancing/proxy/reverse-proxy, and then Apache for more traditional page-serving. (Not that I’m hijacking the request, whatever the Organizer prefers, goes.)
