How to cook a Persian Stew
Learn how to prepare and cook a simple Persian dish we call “Zereshk Polo.” It’s a saffron-based chicken stew served with rice topped with zereshk, a small, tart, cranberry like berry. Persian style Basmati rice with Tahdeeg to be included (literally means ‘bottom of the pot’ → a crispy piece of deliciousness).

We’ll walk through making the dish from scratch and, 45 minutes later should all be able to chow down!
A $5 donation to help cover food costs would be greatly appreciated or bring a bottle of wine.
(total class time estimated 90 minutes)
Teacher's Notes
My parents are both from Iran and this was one of my favorite dishes growing up.
We can fit about 6 folks comfortably in our apartment.

I just found some good music for the next time this is done :).

Nazeri Hafez was featured in Connections Magazine (where I read about him). His father translated a bunch of old Rumi poems into modern Farsi where they could work better together with traditional Persian music. This is the result!
Thanks again Rahmin and Claire for hosting. I had a great time and can’t wait to find time to cook the dish for friends!
hi all – Simone asked me over email for the name of the Persian cook book we were looking at. It’s “New Food of Life” by Najmieh Batmanglij and here is a corresponding amazon.com link http://bit.ly/1VgBD3.

Hi all,
For those of you that were able to attend, I had a lot of fun and it was great to meet you! I’ve compiled the recipes on a wiki found here:

Also, photos from the evening that I took can be found here:

Feel free to send any questions over as I’m sure the directions are missing steps!

Alright, it looks like we have quorum on 11/14 at 5pm! Please mark your calendars and email me directly if you’re going to be attending. I’ll also follow up in the days leading up to the class.
Best,
Rahmin
woops, meant to include the poll linked to below in my previous comment — it has a few dates and times that would work for me. my apartment is in Cole Valley, SF (zip 94117) and can be accessed by the N-Judah and 33 bus line!

Hi Rahmin,
I’d be interested pending on date/location. Though the next two weekends may be a little rought for me.
Would you mind letting me know where your apartment is?
Thank you!
Fiona
Hi Ben, Autumn, glad you guys are interested. Here are a few more dates and times I could teach the class — if we can get a total of at least 3 learners to sign up, happy to have the class at my place!

I just found out about this class. I am definitely interested if it will happen!
Hi Guys,
Sorry for the delay, but, if you’re still interested, I’d love to have you all over and teach this class. I’ve updated the course description and can either do this coming Saturday or the following Saturday afternoon. Please let me know if you can make either date via the poll I set up here:

Best,
Rahmin
Hey Ellen, you should be added to the class attendees list now – sorry about the bug earlier and please let me know if it happens on any other classes!
rahmin@unclasses.org
I want to join, but when i try to sign up, it sends me to an error page. So, this is my confirmation! I’ll try again later.
So long as we stay under 8 people, we can hold this class in my apartment. I’ve updated the location accordingly. Please plan on chipping in to cover actual food costs. We’ll make enough food so we can all eat and have left overs!
Excellent! I’ll ask some friends if they’d be interested. Do we have a location, or should one of us look for a commercial kitchen?

ben,
that’s an excellent album. very heavy and meditative. I’ve got the mp3s and am happy to zip them up and share if anyone is interested.
another group of classically trained Persian musicians, The Shams Ensemble, came to SF awhile back. they had whirling dervish’s and everything — here a few videos from the performance you all may enjoy:
